These avocados with eggs and bacon are a complete and nutritious meal, combined with a simple salad that may already have a full menu. It is a calorie dish, so it should be consumed occasionally.
Avocado is a very soft and creamy fruit that contrasts with crispy bacon and combines beautifully with eggs. You can prepare this recipe in oven or if you are going to make small amount in microwave.
Ingredients
- 4 avocado
- 8 small eggs
- 150 grams of bacon
The preparation
Sprinkle the bacon and cook it in a pan, without any fat, until it is golden and crisp. We take it out and leave it on a paper towel so that it absorbs all the fat.
We divide the avocado in half, remove the bone and with the help of a spoon we remove a little avocado, not much, but just enough to fit the egg.
We put some bacon in the hollow and over the egg. We put in the microwave for about two minutes, until the egg is curdled but the liquid leaves the yolk. We take out and serve with the rest of the bacon on top.
Baking an egg in the microwave is complicated, because you have to hold the power trick to get the egg to suit our taste.
You can also prepare this recipe in the oven. Preheat the oven to 180º C and pour the avocado with the egg and the bacon on top, in which case you do not have to cook the bacon before cooking, as it is cooked in the oven. If you like very liquid yolk, you can first cook the avocado with bacon and white, and when everything is cooked, put the yolks on top and bake another minute or two.
I recommend you serve these avocados with some toast with egg and bacon. You are going to suck your fingers!
